Kanten Brownie
Ingredients (4-5 servings):
1/4 cup of azuki beans (or 150gr cooked beans)2 tbsp kanten (agar-agar)
1 cup of water
2 tbsp of powdered coffee grain
2 tbsp of concentrated apple juice (or rice syrup)
30gr chopped raisins
20gr chopped hazelnuts
Instruction:
1. Wash and drain the azuki beans.2. Place the beans in a pot and 3 cups of water, bring to a boil and let it simmer until soft to turn into a puree (add a cup of water as the liquid evaporates).
3. Add a pinch of salt and cook for 10 more minutes and blend to a puree.
4. Dissolve the kanten (agar-agar) and the ground coffee in a cup of water.
5. Place it a pot and heat it until the kanten mixes completely.
6. Add the concentrated apple juice, the bean puree and the chopped raisins and hazelnuts.
7. Place in a mould, let it cool down and cut in squares.
