Polenta Pesto
Ingredients
Polenta
1 cup corn flour/polenta5 cups of water
1/4 teaspoon salt
Olive oil
Pesto
1 cup fresh parsley or basil3 cloves of garlic
Salt or white miso
Walnuts or pine kernerls
Preparation
Polenta
1. Bring water to a boil. Add the polenta and salt, mixing constantly as it thickens.2. Turn fire to low, cover and simmer for 20 minutes.
Pesto
1. Chop and mix or blend all ingredients.2. Smooth onto the polenta.
