Pressed Salda

Ingredients:

100gr cabbage
10gr carrot
1 cucumber
1tsp raisins
1tsp toasted hazelnuts
2tsp lemon juice
1tsp umeboshi plum vinegar
1tsp shoyu

Instructions:

1. Cut the cabbage, carrot and cucumber in julienne.
2. Place in a bowl and add a pinch of salt.
3. Place a weight on top of the mix and let it rest for 30 minutes.
4. Squeeze the excess of water.
5. Add the raisins, hazelnuts and seasonings and mix well.
